FeedBurner allows you to generate an RSS feed that you can track. There's also a nifty e-mail subscription feature, which similarly allows to you track readers (and even see what e-mail addresses have subscribed.
There are also several tools for optimizing and publicizing your feed.
Although the primary use is for blog feeds, you can burn any kind of RSS, Atom or XML feed.
